My mom always makes ham for Christmas dinner. Ham is probably my favorite meat, so I am always a happy camper!
But there is always soooo much ham left over. We only have 8 people come to our Christmas meal, so we don’t eat that much…not even my powerlifting brother can finish off all of the ham!
I am certain we are not the only family that has leftover ham after Christmas. So I compiled a list of ideas to help you finish up your Christmas ham without getting tired of it!
This is actually what my husband and I had for supper last night. I am sure that ham salad recipes can become more complex, but I keep mine simple: finely-chopped ham and mayonnaise. That’s it. I just chop a bunch of ham and slowly add mayo until I get the consistency I’m looking for.
If you feel adventurous, you could add some different spices or condiments. I would not advise adding salt, since ham is already so salty.
Ham Pot Pie
I am not talking about meat in a pie crust. I am talking about dough noodles, potatoes, and ham cooked in broth. It can be made with noodles bought at the store, but homemade dough noodles taste much better!
The noodles are made of flour, shortening, eggs, milk, and baking powder. This recipe gives a good starting point for the dough.
Ham and Green Beans
I don’t know if this is considered a soup, but we never really did, although it’s got a little bit of a soup consistency. Just mix some ham, green beans (frozen or canned are fine), and some chunks of white potatoes in either water or broth. Cook in a pot on the stove until the green beans are cooked and potatoes are soft.
We like to dish some out in a bowl and pour about a Tablespoon or two of apple cider vinegar on top and then eat it!
I have never made one of these before, but an egg casserole would be a great way to use up some ham and also have breakfasts prepared in advance!

Hot Ham and Cheese Sandwiches
This one is pretty simple. If you’ve ever made toasted cheese sandwiches, just put some pieces of ham between the layers of cheese!
Ham and Cheese Cosmo
This is relatively similar to hot ham and cheese sandwiches. Take a hoagie roll, layer in some ham, top with cheese of your choice, and bake in the oven until the cheese is melted.
Ham and Cheese Quesadillas
Again, this is a spin on hot ham and cheese sandwiches. Instead of using bread, take a flour tortilla and spread a layer of cheese on half the tortilla, then add some ham, followed by a little more cheese. Fold the tortilla over so it looks like a semicircle. Finish cooking just like a toasted cheese sandwich.
Homemade pizza is delicious! We make and can our own pizza sauce and my mom uses her bread machine to make homemade dough. Top it off with some pieces of ham, and enjoy a tasty dinner!
Ham and Bean Soup
There is a member of one of our local fire companies who makes the best ham and bean soup around! This soup uses great northern beans, ham, some onion and maybe celery, and some various spices.
