One of my favorite summertime drinks is iced coffee. And, since yesterday was the last day of school, I thought today would be the perfect day to enjoy some iced coffee! We live relatively far away from any coffee shops, so many times, if I would like iced coffee in the morning, I need to prepare it myself. So, I have figured out a simple system for making these tasty drinks.
A few years back, we purchased a Keurig machine. Since I am the only one who makes coffee for myself at home every morning, it just made things a lot simpler for me trying to get out the door.
If I know that I want iced coffee in the morning, I need to prepare it the night before. I use pint canning jars to brew the coffee into. We drink Eight O’Clock Coffee in our house. To get the perfect amount of coffee, I run the Keurig machine through one K-cup on the medium cup setting and then again on the small cup setting.
Once the coffee is finished brewing, I set the jar on a hot mat on the counter to cool. I let it get to about room temperature and then I put a lid on the jar and put it in the refrigerator.
I have some white plastic lids like these that I like to use, but regular canning lids work just as well.
I put the creamer in my husband’s jar of coffee before it goes in the fridge, so that he can just put some ice in it and go in the morning. I use CoffeeMate Natural Bliss, but any creamer, milk, sugar, or just plain black coffee works just as well. We use four tablespoons of creamer in our iced coffee, but you can put in as much or as little as you prefer.
To make my coffee in the morning, I use a drinking cup with a straw. One of my students gave me this one as a beginning of the year gift. I pour in the coffee, measure in my creamer, stir it up, and add the ice cubes to fill the rest of the cup last.
